No-Bake Pecan Bites
Five ingredients, one bowl, no oven needed. Georgia pecans, nut butter, honey, oats, and a pinch of sea salt — rolled into the easiest snack you'll make all summer. Ready in 30 minutes, gone even faster.
- Worth Pecan Halves, finely chopped1 cup
- Peanut butter or almond butter½ cup
- Honey3 tbsp
- Rolled oats½ cup
- Flaky sea saltpinch
In a medium bowl, stir together the chopped pecans, peanut butter, honey, and rolled oats until fully combined. The mixture should be thick and hold together when pressed. If it feels too crumbly, add a little more honey or nut butter one teaspoon at a time.
Scoop about 1 tablespoon of the mixture and roll into a ball between your palms. Repeat with the remaining mixture until you have about 12 bites. Finish each one with a small pinch of flaky sea salt on top.
Place the bites on a parchment-lined plate or tray. Refrigerate for 20 minutes until firm.
Serve cold straight from the fridge. Store in an airtight container in the refrigerator for up to 2 weeks.
Chop the pecans finely so the bites hold together well — a rough chop leaves too many gaps. And don't skip the flaky sea salt on top. It's a small thing that makes a real difference against the sweetness of the honey.
